The usual approach is to take the stack down below the roof line, cap and vent the flue, and roof over the opening.
Before we start, we check whether the chimney is shared with a neighbour, as it is on many terraces and semis, because that can require a party wall agreement. We also check that the breast below is supported if it has been removed inside, and whether planning or conservation rules apply. Once the stack is down, the roof is battened, membraned and finished in tiles or slates matched to the rest of the slope.
